  1. I would not say that frameworks or learning the science behind cooking is the first step. For me it was the second step. I think you don’t have to learn any scient before frying your first egg, as an example. But science definitely is important if you want to move away from blindly following recipes. And many recipes will not work for you, for various reasons – from your stovetop having different temperature for ‘medium low’ to bloggers coming up with ridicullous recipes just for content. But if you understand the science behind it, you can always adjust it.

  2. Salt Fat Acid Heat – the documentary and the the book opened my eyes to how I could be more flexible in the kitchen and make some health dishes I don’t enjoy taste a lot better without making them unhealthy.

  3. There are way too many cuts in this video. I like your channel but chill out with the tik tok style editing. Makes it unwatchable
